In love With Pasta

Learning to make fresh pasta opens up a world of simple but elegant cooking possibilities. In this class, we’ll create a trio of pastas that are perfect for romantic dinners (or pretty much any other meals). As we make them, you’ll pick up tips that will help you adapt your new pasta knowledge to a wide variety of seasonal dishes.
We’ll begin with a simple lemon and herb fettuccine, tossed with a tomato-kissed seafood cream sauce. Then we’ll whip up some sweet potato gnocchi – one of the easiest pastas on the planet – and serve it with browned butter, seared bits of steak, and wilted greens, with a scattering of Bayley Hazen blue cheese. Finally, we’ll make goat cheese ravioli and drizzle it with a sweet and tangy red wine, cherry, and rosemary glaze.
Class includes instruction time, cooking, and sitting down for a meal with your classmates. Bring a partner or a friend, or come solo and learn to make foods that will surprise and delight your favorite eaters. Questions encouraged. Bring an apron, if you’d like.
Many dietary restrictions can be accommodated, but all the dishes in this class include gluten and eggs. The majority of our ingredients – most importantly, all of the animal products – will be sourced from local farms. Seafood comes from Wood Mountain Fish Company.

Suzanne Podhaizer is a chef, farmer, and award-winning journalist with a passion for creative, ethical cooking (and eating). She and her partner, Jack, have a homestead in St. Johnsbury. There, they sugar, forage, and grow food plants and mushrooms. Suzanne is entranced by cheese, edible flowers, wild foods, books, board games, and photography. If she could teach everybody one cooking technique, it would be braising. She also loves dreaming up themed menus, especially when they’re based on literature, film, or moments from history.
