Better Boards: Building Gorgeous & Delicious cheese, snack, & dessert platters

If you admire the charcuterie and cheese boards you see at parties, are curious about the new butter board trend, or love making (and eating) an array of bite-sized desserts, this class is for you!

 

With a collection of meats, cheeses, nuts, pickled things, condiments, and drizzles to choose from, we will each build a unique savory board, experimenting with different ways of presenting our favorite items. We’ll talk about geometric versus organic approaches, and about various ways to play with color and flavor.

 

Then, we’ll move on to desserts, using pieces of brownies, bar cookies, fruits, and candies to create individualized sweet spreads.

 

This class is playful and creative, and there will be lots of talking about different ways to make boards beautiful. The best thing is: there’s no wrong answer! Bring your phone or camera to document your creativity, an apron if you’ve got one, and a selection of your favorite platters, boards, and fancy dishes from home, so that you can take your creations with you when you leave.

 

Because the boards are made individually, you’ll have lots of control over your creations. Most dietary restrictions can be accommodated, but there will be gluten and dairy in many of the desserts. All cheeses and meats will be from Vermont.

 

Instructor: Suzanne Podhaizer

Suzanne Podhaizer is a chef, farmer, and award-winning journalist with a passion for creative, ethical cooking (and eating). She and her partner, Jack, have a homestead in St. Johnsbury. There, they sugar, forage, and grow food plants and mushrooms. Suzanne is entranced by cheese, edible flowers, wild foods, books, board games, and photography. If she could teach everybody one cooking technique, it would be braising. She also loves dreaming up themed menus, especially when they’re based on literature, film, or moments from history.
